Jéremie Illouz got the wine bug living in Paris and went to study oenology in Bordeaux. There he met Fabien Jouves of Mas del Perié, by whom he’s been deeply influenced. Illouz moved to Cahors in 2008 and has been making boundary pushing wines in the ancient region since.
