TIBERI DAVID

Vino Cotto, an ancient practice of winemaking in which the grape must is slowly cooked, is all that Tiberi David makes and has made for generations. The wine is made from Verdicchio, Montepulciano, Trebbiano and Sangiovese vines at 436 meters above sea level. After pressing and the slow cooking of the must, the wines are aged in wood until they become “the color of a rooster’s eye” at which point they are ready to be bottled.
