FATTORIA CASPRI

10 years ago Bertrand Habsiger was sent on a mission. He was tasked with finding a vineyard where he would be able to make wine in the most natural way possible. He chose the Fattoria Di Caspri winery, located in the hills of Southern Tuscany, where he now farms by the biodynamic calendar. There are 9 ha of vines, 7 ha of olives, and the property is surrounded by forest. Vineyard treatment includes tisane (hot water with herbs) and decoction (cold water with extracts). Bertrand’s no till method means the earth is not disturbed. There is a completely noninterventionist approach to winemaking as well. Nothing is added and nothing is taken away.
